Conservation & Freezing
Our tips for an optimal storage of the fresh truffles
To fully enjoy fresh truffles, it is recommended to consume them quickly after purchase.
Thanks to our two weekly deliveries, we ensure optimal quality and freshness, minimizing the need to store them for long periods at home.
However, they can be stored for up to a week after purchase, under the following conditions:
- Wrap the truffles in absorbent paper (which should be changed daily).
- Place them in an airtight jar.
- Always store them in the fridge between 2°C and 5°C.
We recommend avoiding the use of rice to store fresh truffles, as it dries them out and absorbs the aroma of the truffles.
The truffles are sold washed and brushed. However, we recommend a final cleaning under very cold water with a mushroom brush. Then, dry them thoroughly with absorbent paper. This should be done just before cooking.
Fresh black truffles can be frozen.
It is possible to freeze black truffles, whether summer, autumn, or winter, while preserving their taste and aroma. However, it is important to note that freezing is not recommended for the Piedmont white truffle, as it would lose almost all of its fragrance during the process.
- To freeze whole truffles, ensure they are thoroughly cleaned, then wrap them in a freezer bag, preferably vacuum-sealed for better preservation. Use them all at once when thawing.
- If you prefer to freeze pre-sliced truffles, you can cut them into thin slices or cubes. Then, place the pieces on non-stick paper and freeze them. Once frozen, transfer them to an airtight jar and keep it in the freezer. This method allows you to use them as needed throughout the year, while best preserving their taste qualities.
