The truffle of the moment: The black summer truffle

The summer truffle, known as ‘scorzone’ in Italian, is distinguished by its delicate, light undergrowth fragrance and subtle forest mushroom flavour.
Season: June to mid-September

Beneath its black skin lies yellowish-beige flesh, marbled with white veins. Although its flavour profile is more subdued than that of other truffles, it is no less enjoyable and much appreciated.
